The Elora Mill Hotel and Spa

Perched at the edge of the Grand River where it tumbles dramatically into the Elora Gorge, this showstopper hotel melds charming history with luxurious amenities. Originally a centuries-old grist mill, the space underwent an extensive six-year overhaul and now boasts many irresistible attractions. Yes, there is a serenity-inducing spa, a provenance-heavy resto with foraged ingredients and a pool that’s open year-round and cantilevered over the gorge. But our favourite feature has to be the supremely comfortable guest rooms, where old-world limestone walls and beams meet new-fangled perks like Dyson hair dryers. Create a luxurious, away-from-it-all feeling at home with our Select Cotton Sateen.

Manoir Hovey

This award-winning Relais & Chateaux property truly has something for everyone. Set in 30 acres of woods and English gardens in Quebec’s Eastern Townships, Manoir Hovey is as ideal for unwinding (they’re renowned for their wellness treatments), as it is for activities. There’s a clay tennis court, heated outdoor swimming pool (it’s nestled in a rock garden), gym, paddle boards, touring bikes and more. The romantic dining room serves up exquisitely prepared French Canadian-inspired fare using regional ingredients, and the accommodations range from rustically elegant rooms to romantic lakeside cottages. Layer in lightweight luxury with our Premium Percale.

The Walper

Check into Kitchener, Ontario’s The Walper for a dynamic city break. The historical 1893 landmark (it’s hosted countless Prime Ministers, including Justin Trudeau) is a design delight of contemporary art, mid-century-style furnishings and expansive suites. There are 92 rooms (no two exactly the same) and thoughtful in-room touches abound – we love the delicious-smelling vegan hand soaps that are made locally. The Walper is a great base for exploring the city’s independent shops, cool cocktail bars, heritage homes and Art Gallery. End the day at the hotel’s Lokal, a chic spot for a Blood Orange Fizz and house-made chips. Relax in the city in our Classic Bathrobe.

The Merrill House

This beyond charming Gothic Revival Gingerbread mansion is our favourite place to stay in Prince Edward County. Set in the pretty town of Picton, Ontario, Merrill House is more than just a stunning destination. Socially-conscious owners Jordan and Evert founded the Venezuela Education and Medical Supply Relief, a charity that supports some of the most vulnerable children and sick people in the world – when you stay here, you support their efforts. The feel-good factor continues in the 14 rooms, each of which are themed and individually decorated (we love the Dreaming Suite which has a wood-burning fireplace). MH also has a Burgundian-inspired resto with a Wine Spectator-awarded cellar. It is contemporary luxury in a re-imagined Victorian setting.  Channel country-house charm with our Traditional Chambray.
